Honey Graham Waffles + Caramelized Pears
Hello! I fiiiinally got this recipe done. It’s been on my shoot list forever it feels like but I was waiting on getting honey from the honey harvest I documented from my uncle’s bees a couple months back. It was worth the wait. I struggled with what sort of recipe to develop to really showcase the incredible honey here. I settled on these waffles and they are so tasty. They’re kinda like a whole wheat waffle, since that’s technically what graham flour is: a type of whole wheat flour. They are slightly sweet and ultra fluffy and little nutty from the graham flour. They are the perfect canvas for buttery pears that have been caramelized in even more honey to really drive the flavor home. If you want to make these and don’t have graham flour or don’t feel like going to the trouble to buy it, feel free to sub in whole wheat instead.

I know most people don’t have a beekeeper in their family who can supply them with delicious, local honey but I encourage you to at least find local honey in your area if you can! Try a farmer’s market or even a local grocery store. Not only are you supporting your local farmers and community, but consuming local honey can help with allergies. Pretty neat! Honey Graham Waffles + Caramelized Pears
makes about 6-8 waffles
waffles
1 c all-purpose flour
1 c graham flour (I used Bob’s Red Mill but you could also substitute whole wheat flour)
1 t baking soda
2 t baking powder
1/2 t Himalayan pink salt
1/2 t ground cinnamon
1 c buttermilk
1 t vanilla extract
1/4 c honey (try to find local to you if you can!), plus more for drizzling on top
2 large eggs, room temperature
1/4 c unsalted butter, melted and cooled slightly
caramelized pears
2 ripe but firm pears (I used bartlett but use whatever pear you like)
1 T unsalted butter (preferably grass-fed)
1/4 t cinnamon
pinch of Himalayan pink salt
1 T honey
make the waffle batter
In a large bowl, whisk together the flours, baking soda, baking powder, salt, and cinnamon and set aside. In another bowl, whisk together the buttermilk, eggs, vanilla extract, melted butter, and honey until well combined. Add in the dry mixture and mix just until the flour mostly disappears and a somewhat smooth batter forms. A few lumps are ok! Set aside while you make the pears. Preheat your waffle iron.
caramelize the pears
Heat a large cast-iron skillet over medium-high heat. Slice the pears in half lengthwise, core, then slice each half into four slices so you end up with 8 slices per pear. Add in the butter and allow to melt then add in the honey and salt and give it a stir to combine with the butter then add in the pear slices and give the pan a gentle shake to coat all the pears evenly in the mixture. Allow to cook for about 2-3 minutes on one side until caramelized, then flip and cook another 2-3 minutes. The sauce should be thickened slightly and deep caramel in color. Remove from heat and set aside to top the waffles with.
assemble and serve
Make waffles according to your waffle iron directions. You can keep waffles warm in a 200 F oven on a baking sheet while you get them all made if you’d like. Top waffles with a smear of butter, the caramelized pears and some of their juices, and a drizzle of honey. Enjoy!
