Acai Bowl
Smoothie bowls are everywhere right now. They're a fun twist on a typical smoothie because you can add all kinds of toppings and make it more of a hearty and fueling breakfast. My favorite type of smoothie bowl is an acai bowl, which is just a smoothie bowl with acai added. Acai, if you're not familiar, is a berry from a tree native to South America. It's considered a superfood as it's packed with all kinds of antioxidants, vitamins, and nutrients. You can usually find it in juice or frozen form at the grocery store but I like to use the frozen packs for this smoothie. I like this brand. Hope you love this bowl as much as I do!
Acai Bowl
1 pack frozen acai puree
3/4 c frozen blueberries
1 frozen banana, chopped
1/2 c almond milk (my recipe here)
dash of cayenne
1/2 t ground turmeric
1 cup kale, roughly chopped
toppings:
1/4 c granola (my recipe here)
1 t bee pollen
1 T chia seeds
3-4 chopped strawberries
few slices of fresh banana
1 T almond butter
sprinkle of cinnamon
Blend all ingredients (minus the toppings) until smooth. It may take a little finessing with your blender as this mixture is supposed to be thick, so you can float the toppings on top. Pour into a wide bowl and top with suggested toppings or come up with your own! Nuts, flax seeds, raspberries, blackberries, and goji berries are all great additions too. Also, I find that the frozen banana adds enough sweetness for me, but if you'd like it a little sweeter, you could always add a date or two or a drizzle of honey.
Also, if you don't have time for a leisurely breakfast in the morning like me (my morning starts at 4:30), you can skip the toppings and make this a little on the thinner side by adding a little more almond milk and take it in a glass to go.
