Swiss Chard Wraps + Herby Tahini Spread
To me, these are the perfect little bundle to easily fill your bod up with tons of veggies. Although swiss chard is a member of the dark leafy green family, its flavor and texture are much milder than kale, making it the perfect wrapper. The herby tahini spread is bursting with flavor and livens up all the fresh veggies. Feel free to add chicken or quinoa to bump up the protein, too. Don't worry if you have leftover veggies. I usually chop up a bunch for the week and just assemble my wrap for my lunch the next day the night before.
Swiss Chard Wraps + Herby Tahini Spread
makes 2 wraps
2 large swiss chard leaves, washed and dried
1 carrot, julienned
1 bell pepper, julienned
1 cucumber, thinly sliced
1 radish, thinly sliced
1 avocado, thinly sliced
micro greens
herby tahini spread (recipe below)
Lay the chard leaf upside down, with the large stem facing up. Run a paring knife along the thick end of the stem horizontally to shave the thicker part down and make it easier to roll up. Flip over and spread a few tablespoons of the herby tahini spread in the middle of the leaf. Layer on the veggies and top with micro greens. Roll up like a burrito.
Herby Tahini Spread
1/2 c tahini
juice of one lemon
1 T fresh parsley, chopped
1 T fresh dill, chopped
1 T fresh basil, chopped
1 T fresh chives, chopped
Whisk together ingredients in a bowl to combine.
