Shout it from the rooftops with me: STRAWBERRY SEASON IS THE BEST SEASON! Especially the sweet little juicy gems you find only at the farmer’s market. The ones that smell like candy a mile away. You know the ones. It just so happens I recently found myself in possession of such strawberries and I could think of nothing better to use them for than a Spring homage to the classic spritz.

I’m kicking off Spritz season with this beautiful Strawberry Fields Forever Spring Spritz with my friends at Fiorente Elderflower Liqueur. I couldn’t pass up the opportunity to name the drink after my first love, The Beatles, and as the name suggests, this cocktail is vibrant and sparkling with sweet notes of floral and lemon. Fiorente Elderflower Liqueur is made with wild elderflowers grown in the foothills of the Alps and is less sweet than other elderflower liqueurs on the market. It’s made with the addition of Sicilian lemon peel, fresh mint, and honey from Francoli Distillery’s own bees where the liqueur is produced.

I created a fresh strawberry honey syrup which pairs beautifully with the Fiorente Elderflower Liqueur and I finish the cocktail off with some botanical gin (my fave, you know me) and some sparkling wine and you’ve got the most refreshing cocktail you could dream up for a Spring evening. And I love that this cocktail is perfectly balanced and not too sweet. Each flavor is distinctive and complements one another. I’ve been sipping one of these a few nights a week since I first developed this recipe and I don’t see any end in sight as we head into warmer months. Join me, won’t you?


Strawberry Fields Forever Spring Spritz

serves 1 cocktail, syrup makes enough for about 6 cocktails

1 oz Fiorente Elderflower Liqueur
2 oz gin
1 1/2 oz strawberry honey syrup (recipe below)
1/2 oz lemon juice, freshly squeezed
4 oz cava or prosecco
sparkling water, to top
garnish with lemon peel and strawberries (stem-on)

strawberry honey syrup
1 c fresh strawberries, de-stemmed and quartered
1/2 c honey
1/2 c water

make the syrup
Combine the strawberries, honey, and water together in a saucepan over medium-high heat and bring to a boil then reduce heat to low and simmer for about 10-15 minutes, until strawberries are soft and starting to break down.  Allow to cool then strain and transfer to a glass jar.  Store in fridge until ready to use. Tip: save the spent strawberries as a fresh jam of sorts to spread on toast, pancakes, or spoon onto breakfast oats.

assemble your spritz
In a cocktail shaker, combine the elderflower liqueur, gin, strawberry syrup, lemon juice, and ice. Shake vigorously for about 15 seconds until shaker is cold. Fill a glass with ice and strain contents of shaker into glass. Top off with cava and a splash of sparkling water.  Garnish with a strawberry and lemon peel and spritz away!
