Smoked Sea Salt + Vanilla Coffee Float
Root beer floats, eat your heart out. There's a new float in town, and he fancy. This is sort of a mashup of a classic float and an affogato (hot espresso poured over cold gelato) but instead I've swapped in cold brew iced coffee. The result is refreshing, creamy summery coffee heaven. So, so good.

Smoked Sea Salt Coffee Float
8 oz cold brew concentrate (recipe here)
4 oz sparkling water
2 scoops vanilla gelato
2 T Smoked Sea Salt Vanilla Syrup (recipe below)
smoked sea salt, to garnish
In a tall glass, stir together the vanilla syrup and cold brew concentrate. Add the gelato scoops, top off with sparkling water and a sprinkle of salt.
Smoked Sea Salt Vanilla Syrup
1 c organic cane sugar
1 c water
1 vanilla bean, scraped
pinch smoked sea salt
Combine all ingredients including vanilla bean pod in a saucepan over medium heat and cook until sugar dissolves and mixture just comes to a boil. Remove from heat and cool completely. Remove vanilla bean pod and transfer to a glass jar. Store at room temperature.
