Chocolate Tahini Energy Bites | All Purpose Flour Child

I’m really into tahini these days. And Middle-Eastern flavors in general, I suppose. Tahini has a way of skirting the sweet and savory line in a way something like peanut butter can’t quite achieve. To me it has such a unique complexity and it pairs so well with chocolate! I’ve been trying to stay away from more processed sugar lately (not exactly the easiest thing in the world when you run a largely baking focused blog, lol) and I’m always looking for little snacks to make that I can pop a few of right when I get home from work before I work out. These little bites fit the bill. They are sweet without being overly so, ultra chocolatey, nutty, and have a nice crunch from the cacao nibs, too! They are very easy to make and are great to just keep on hand in the fridge whenever the craving strikes! Chocolate Tahini Energy Bites

makes about 24 bites

1 1/2 c raw cashews
1/4 c raw cacao powder
10 dates, pitted (try to pick soft ones or you can soak them in boiling water for about 10 minutes to soften)
1/3 c + 3 T tahini
3 T cacao nibs
2 T maple syrup
pinch of Himalayan pink salt
1/4 c sesame seeds, for rolling balls in

Combine all ingredients except the sesame seeds in a food processor or high-powered blender and pulse until mixture forms a sticky dough that holds together. Roll mixture into 1 inch balls then roll in sesame seeds. Enjoy! Store in refrigerator.
