Cider Collins

A classic Tom Collins is crisp, refreshing, and lightly effervescent.  The addition of hard apple cider is an unexpected and delicious twist and just the cocktail for you if you're excited for Fall but are still in denial Summer has faded (right there with ya).

Cider Tom Collins 

makes 1 cocktail

4 oz hard apple cider
1 oz botanical gin ( I love Hendricks)
1 oz simple syrup
juice of 1 lemon
2 dashes angostura bitters
ice
pellegrino, to finish
apple slice, to garnish

In a cocktail shaker, combine the cider, gin, simple syrup, lemon juice, and bitters then fill with ice and shake until shaker is cold.  Fill a highball glass with ice and pour in the cider mixture then top with the sparkling water. Garnish with an apple slice.
