Simple Roasted Sweet Potatoes
Sweet potatoes are one of my favorite foods. Luckily, they also happen to be incredibly good for you. They are loaded with vitamins and a good source of fiber. As the name suggests, these are about as simple as you can get. And if you use organic, you don't even need to peel them! I especially love the combination of the smoky paprika with the sweetness of the potatoes. I like to roast up a big batch and just keep them on hand to have throughout the week. I eat them on their own, mixed in a power bowl, as a bed for a poached egg with some kale, or alongside roasted chicken.
Simple Roasted Sweet Potatoes
4 medium organic sweet potatoes
2 T coconut oil, melted
1 t salt
1/2 t pepper
1 t smoked paprika
Preheat oven to 400. Wash sweet potatoes and chop into about 1/2 inch cubes and add to a large mixing bowl. Drizzle the coconut oil over the sweet potatoes then sprinkle over the salt, pepper, and paprika. Toss all the sweet potatoes until the spices are evenly distributed. Add the sweet potatoes to a baking sheet. Bake for about 25-30 minutes until the sweet potatoes are fork tender and crisp around the edges.
