Wholesome Chai-Spiced Zucchini Loaf
This loaf is full of all the delicious spices that you'd find in a cup of chai tea: warm cinnamon, spicy ginger and black pepper, floral cardamom, complex clove. The addition of whole wheat flour and coconut oil along with plenty of zucchini flecking that cake throughout, this is great little snack or breakfast. Enjoy with a cup of chai, what else!?
Wholesome Chai-Spiced Zucchini Loaf
makes one loaf
1 c all purpose flour
1 c whole wheat flour
3/4 c brown sugar
1 t baking soda
1 t baking powder
1 t salt
1 t cinnamon
1/2 t ground ginger
1/4 t ground cardamom
1/4 t ground cloves
1/4 t freshly cracked black pepper
1 1/2 c zucchini, grated
1/2 c coconut oil, melted and cooled
2 eggs, room temperature
1/3 c plain whole milk yogurt
1 t vanilla extract
Preheat oven to 350 degrees and grease and flour the sides and bottom of a loaf pan. Set aside. In a large bowl, whisk together the flours, brown sugar, baking soda, baking powder, salt, and spices. In another bowl, combine the coconut oil, eggs, yogurt, and vanilla. Wrap the grated zucchini in a kitchen towel and squeeze as much water out as you can. Slowly whisk the wet ingredients into the dry until no lumps remain. Fold in the zucchini then pour the batter into the loaf pan. Bake for about 45 minutes to an hour, until a toothpick inserted in to the center of the cake comes out clean.
