Apple Ginger Granola
Granola and yogurt is one of my go-to breakfasts during the week because it's fast, portable, and keeps me full until lunch. I usually make a big batch of my favorite granola but I wanted to mix it up and I was craving something autumnal and came up with this apple and ginger combination. This is some seriously flavorful granola! Both the apple and the ginger flavors come at ya in a one-two punch: there's not only ground ginger but also plenty of chewy crystallized ginger and not only dried apples but reduced apple cider! This would also make a delicious cereal with some cold almond milk poured on top. I hope you give it a try!
Apple Ginger Granola
2 c old fashioned oats
1 c pecans, roughly chopped
1 c hazelnuts, roughly chopped
2 T golden flax seeds
2 T hemp hearts
1/3 c unsweetened large flake coconut
1 t cinnamon
1/2 t ground ginger
1/2 t pink himalayan sea salt
1/4 c brown sugar
1/2 c crystallized ginger, finely chopped
1 c apple cider
1/3 c maple syrup
1/4 c grass fed butter, melted
1 egg white
1 c dried apples, roughly chopped
1/4 c pepitas (pumpkin seeds)
Preheat the oven to 325 degrees. In a small saucepan over medium-low heat, add the apple cider and simmer for 20 minutes or so, until the cider has reduced to a 1/4 cup and is thick and syrupy. Set aside to cool slightly.
In a large bowl, combine the oats, nuts, hemp hearts, flax seeds, coconut, spices, salt, crystallized ginger and brown sugar.
In another bowl, combine the reduced apple cider, maple syrup, and melted butter. Combine the wet mixture with the oat mixture and mix until fully incorporated. Drizzle the egg white over the mixture and toss to combine.
Spread the granola evenly over a parchment-lined baking tray and bake for about 25-30 minutes, until golden brown. Remove from oven and sprinkle over the dried apples and pepitas.
